One Flaky All-Butter Crust: Pies, Galettes, Hand Pies & Pie Bites

Jars of spiced sliced apples on a rustic wooden table

Our master all-butter pie dough four ways — classic pie, rustic galette, hand pies and berry cheesecake pie bites — made quick with homestead preserves.

The slowest part of pie baking is peeling, slicing, spicing and cooking down the fruit. With a jar of homestead preserves in the pantry, that work is already done — and a warm homemade pie becomes a quick, cozy project. Here is our one all-butter dough, four ways.

Our master all-butter crust

  • Unbleached all-purpose wheat flour

  • Cold butter, cut into cubes and chilled

  • Fine sea salt

  • Ice water (a splash of cold milk or cream works too)

Method: Whisk the flour and salt, then cut in the cold butter until you have pea-sized pieces — those little butter chunks turn to steam in the oven and make the flaky layers. Drizzle in ice water a spoonful at a time until the dough just holds together. Fold it over on itself two or three times, press into a disc, wrap, and chill for at least one hour before rolling.

Classic 9-inch pie

Roll half the dough into the dish, fill with a quart of spiced apples or pears, then top with a second crust or a lattice. Bake at 425°F for 15 minutes to set the crust, then lower to 375°F and bake until golden and bubbling.

Rustic galette

No pie dish needed. Roll the dough into a rough circle on parchment, spoon the fruit into the middle leaving a 2-inch border, and fold the edges up in loose pleats. Brush with milk, sprinkle with coarse sugar and bake at 400°F for 30–35 minutes.

Hand pies

Cut the dough into 3" × 4" rectangles or rounds. Add 1–2 tablespoons of a thicker preserve — apple, blueberry, peach or strawberry — fold, crimp with a fork and cut a small vent. Bake at 385°F for 20–22 minutes.

Pie bites (mini pies)

Shell: wheat flour, butter, salt, dairy and finely crushed graham crackers for a warm, honeyed crunch. Press into a mini muffin tin and bake until crisp.

Filling: cream cheese, sugar and vanilla whipped until smooth, swirled with a mixed berry purée of strawberry, raspberry and plum — or a spoonful of our mixed berry preserves.

Contains: wheat/gluten, dairy. All items may contain or come into contact with nuts.
